For the last 6 months, I have been on a mission to live a healthier lifestyle. Part of that journey includes preparing healthy meals for my family. At times, it can be difficult to make something that everyone in the family likes. My Husband is your typical beef and potatoes country boy. My two young Daughters are a bit more adventurous with their meals than he is but they are still kids so they have their limits also. I turned to Jennie-O for some help.

Jennie-O offers turkey deli meats, ground turkey, turkey burgers, turkey franks, turkey bratwurst, turkey bacon, turkey meatballs, turkey breasts, and whole turkeys. Jennie-O KNOWS turkey!

I used Jennie-O Lean Taco Seasoned Ground Turkey to create a white and black bean chili. I browned the ground turkey and then added my vegetables. I chose to use onion, bell peppers and diced tomatoes. Then I added both white and black beans. I set the temperature to low and let it cook for a couple hours. When my Husband came home from work, we sat down for dinner. I didn’t tell him that the chili had turkey in it; he had assumed it was beef. I watched him eat a couple servings and then told him. He was surprised. My Daughters and I also really like the chili. Our first Jennie-O dish was a success!

 

While out visiting the Jennie-O website, I noticed they have a plethora of recipes on their website. I thought their Simple Turkey Sausage Breakfast Rollers sounded delicious. I think my Daughters and I will make this on Saturday; they will love assembling the rollers!

Simple Turkey Sausage Breakfast Rollers

Ingredients-

8 corn tortillas

8 JENNIE-O Lean Turkey Breakfast Sausage Links

1 ½ cups liquid egg whites

4 tablespoons light cream cheese

2 cups fresh spinach leaves

Fresh salsa, if desired

Directions

Heat oven to 500°F. Stack tortillas and wrap in foil. Place in oven 5 to 7 minutes or until warmed. Cook sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.

Over medium heat, mist nonstick skillet with cooking spray. Scramble eggs, breaking into small pieces. Transfer cooked eggs to bowl; cover to keep warm until ready to assemble rollers.

Place one tortilla on a plate (keep remaining tortillas wrapped in foil). Spread ½ tablespoon cream cheese over tortilla. Top half of tortilla with ¼ cup spinach leaves, eggs and 1 sausage link horizontally across center. Starting at the edge, roll tortilla. Place on plate or serving platter, seam side down. Repeat with remaining ingredients. Serve with salsa, if desired.
