If you would crock-pot it, I’d say put all ingredients in except the chips. When time to serve, place the chips on the plate and top with the filling. I think the chips would end up soggy if they sat in a crockpot….?

Honestly, I don’t use green chilies for hardly anything as our family isn’t a huge fan usually either. But the diced tomatoes w/green chilies really gives the dish a little more flavor. So if you find it too bland with the plain diced tomatoes, consider giving the alternative a try!
