Yesterday, was the first official day of fall. As I write this, it is a cool rainy evening in Oregon. The leaves have begun to change colors and their is a nip in the air that wasn’t there a few weeks ago.

Fall to me means that it is time to turn the heater on in the house, put away my flip flops and dig our my booties, find all my warm socks and pull out my cookbooks with soup recipes. Their isn’t much better than a warm bowl of soup on a cold fall evening.

Today, while I was searching the Nutrisystem website for a tasty side dish, I came across their Cauliflower Sweet Potato Soup recipe. This soup looks amazing! I cannot wait to make this!

Ingredients:
2 cups sweet potatoes, peeled and cubed
2 cups cauliflower, chopped
½ medium onion, chopped
3 cloves garlic, minced
2 cups vegetable broth, low sodium
1 ½ tsp. paprika
½ tsp. coriander
½ tsp. cumin
¼ tsp. ground ginger
1 cup nonfat milk
2 Tbsp. flour
Optional: 4 tsp. fresh chives, chopped

Directions:
In a large stockpot, combine all ingredients except for milk, flour, and chives. Bring to a boil, cover and cook until vegetables are soft- about 30 minutes.
In a bowl, mix together flour and milk. Add to pot and cook until soup thickens- about 5 minutes.
Remove from heat and blend with an immersion blender or a food processor. Blend until smooth.
Garnish with chopped chives.

Servings: 4 (1 cup each)

    That soup sounds wonderful. I am not sure if I can get my husband to eat it but that just leaves more for me. I will be trying that next week. I have already made a fresh veggy soup for this week. Thank you so much for the idea.
