My family and I are getting ready to take off for a long weekend of camping. When we go camping, I like to make our meals as easy as possible. I choose foods that can either be prepared before we leave or easily done at our campsite. 

For this trip, I decided to bring biscuits for a breakfast. I had just heard about combining blueberries with lemon and thyme. I thought they sounded like a fun addition to my rustic biscuit recipe. 

Sugar-Free Blueberry Lemon Thyme Rustic Biscuits

Ingredients:

2 and 1/2 cups all-purpose flour, leveled
1/4 cup monk fruit
1/2 tsp kosher salt
1 and 1/2 TBS baking powder
1 stick of FROZEN butter
1 large egg
2 tsp vanilla
1/3 cup heavy cream
1/3 cup plain greek yogurt

8-ounce package cubed and frozen cream cheese
1 cup frozen blueberries
zest of 1 lemon
1 tsp fresh chopped thyme

A couple of years ago, we removed sugar from our diets. It wasn’t easy, but it was something we felt strongly about. The benefits have been amazing! I remember my grandmother making ‘refrigerator pickles’ when I was little. I have always loved the sweet, vinegary taste. I feel like they go well with almost any meal! 1 tsp vanilla extract

1/4 cup Lakanto Powdered Munk Fruit
1 1/2 cup super-fine almond flour
1/2 tsp baking powder
1/4 tsp baking soda

Does your family struggle to eat ‘leftovers’?  For years, this was an issue in our home.  While I’m sure it was all in our heads, we felt like leftovers just didn’t taste as good.  Maybe even tasted a bit old….

Who doesn’t love a good brownie?! Just because my family follows the ketogenic diet, doesn’t mean we don’t enjoy our sweet treats every now and then. Brownies are one of our favorite “go to” desserts.

Hotdish. It’s a staple where I grew up. For those of you not from the upper midwest, a hot dish = a casserole.
There are many, many versions of Tater Tot Hotdish. My husband grew up with a different version than I grew up with. Today I’m sharing my mom’s version. Lately, we have been eating a lot more fish. We live near the Oregon Coast so we have easy access to fresh seafood. We like getting fresh wild rockfish because it is light, has a mild flavor, and is more budget-friendly than some of the other fish available.

The older I get, the more I realize how picky I was as a child.  I used to turn my nose up at all kinds of foods.  And vegetables?  The main one I’d eat was canned corn or corn on the cob.  I finally branched out to eating salads once I was in my 20s.  But now that I’m in my 30s, I’m really trying to be more careful about my food choices.  I’m willing to try almost anything these days, especially if it’s healthier for me.
