Are you looking for a fun way to get an extra serving of veggies? Healthy Buffalo Veggie Tots are delicious as well as nutritious! They are also super easy to make.
Ingredients
2 cups of shredded veggies- I used a blend of broccoli, cauliflower, and carrots. You can use any veggies you have on hand. To make things easier, I shredded the veggies in my food processor. Be careful to not puree your veggies. You want them to have a rice texture.
