These are my own honest opinions.
Japanese have been perfecting the art of making sharp, strong, well-balanced blades since the Samurai era. Their exceptional craftsmanship was developed over centuries and is still unrivaled to this day! Shun Cutlery is inspired by this wonderful Japanese tradition. ‘Shun’, pronounced ‘shoon’, refers to the time when a food is at the peak of its perfection. Shun knives are designed to always be at the peak of their perfection!
Shun Cutlery Sora blades are handmade and one of a kind: they use a Composite Blade technology to create a multi-layer blade made of VG10 and 420J stainless steel. The layers are laser cut and welded together. At the joint is a wavy pattern based on traditional Japanese sword hamon lines as a reference to their heritage. The handles are made of textured PP/TPE polymer blend to provide a secure and comfortable grip, while being easy to maintain.
For this review, I received 2 knives: the Sora Ultimate Utility Knife and the Sora Santoku Knife. The Ultimate Utility Knife has a very unique look. It’s sort of a hybrid between a spreader knife, a chopping knife, and a vegetable knife. The blade is large and rounded and the cutting edge is serrated. The rounded side and tip of the blade can be used to spread butter, mayo, etc. The low-frequency serrated edge of the blade is perfect to slice fruit and veggies with thin skin such as tomatoes. This knife also works well to chop making it a truly multi-functional knife. The cuts are precise and effortless. I love this knife for its atypical look and versatility!
The Sora Santoku Knife has a 7-inch blade so the knife shorter than a regular chef’s knife making it lighter and super easy to maneuver. I love to use it for virtually any day-to-day cutting tasks. Satoku knives are ideal for slicing, mincing, and dicing but unlike most Satoku blades (which are flat), the one on this Sora Knife is slightly curved which means that it can be used with a rocking motion. I think everyone should have a Santoku knife like this one. I use mine all the time and I love that it can accomplish all basic cutting tasks with ease.
Overall I am really pleased with both Shun Sora Knives. Both of them are really easy and comfortable to use and can handle multiple cutting jobs. The blades are well designed with layers of high carbon stainless steel for unsurpassed sharpness and durability. These blades would be perfect for any home chef as well as for someone who needs to equip themselves for the first time. These knives are of outstanding quality and will be greatly appreciated!

Santoku knives are my favorite and most used knife in the kitchen.

Those knives look amazing! That is something I want to get my Mother-in-law for Christmas. Her knifes are horrid and dull and break all the time. She needs nice ones like these.

Wow, I have never seen anything quite like the utility knife. It is great that it does so much in one knife.
