Tonight, our three year old son requested Chocolate Chip Muffins for supper. (I should first mention that lunch is our big family multi-course meal and supper is a smaller meal of left overs, cereal, or easier items.) Muffins is something I have typically “cheated” on and used mixes instead of homemade. It’s not that I hadn’t tried to make them before but every recipe I had previously tried would turn out dry, crumbly, and be a big disappointment. However, tonight, I searched our cupboard to no avail. There were no Chocolate Chip Muffin mixes to be seen. So I jumped on the computer to give another new recipe a go. I am so glad I did because they turned out great! Now I need to find a good blueberry muffin recipe.
Chocolate Chip Muffins Recipe (courtesy of Food.com)
~2 Cups Flour
~1/3 Cup Light Brown Sugar, Packed
~1/3 Cup Sugar
~2 Teaspoons Baking Powder
~1/2 Teaspoon Salt
~2/3 Cup Milk
~1/2 Cup Butter, Melted & Cooled
~2 Eggs, Lightly Beaten
~1 Teaspoon Vanilla
~1 11 1/2 Ounce Package Chocolate Chips
~1/2 Cup Walnuts or 1/2 Cup Pecans, Chopped
Changes I made: I used half wheat flour and half white. Instead of 1 Teaspoon vanilla, I used 2 Teaspoons. We omitted the nuts. Also, I forgot to cool the butter before adding to the other ingredients and we didn’t notice any adverse effects.
Preheat oven to 400 degrees.
In a large bowl, combine the flour, sugars, baking powder and milk. Stir well.
In a separate bowl, stir together the milk, eggs, butter, and vanilla.
Combine the two bowls ingredients and stir till just combined. (Do NOT over-stir!)
Add chocolate chips and nuts.
Spoon batter into a lined muffin pan.
Bake for 15-20 minutes or till done.
Yield: 18 muffins
The kids and I love to cook and bake together. It doesn’t matter to them if it’s from scratch (which I try to do most of the time) or a package. They all love climbing up by the cupboard and helping. Stirring, dumping, pouring, and cracking eggs are all favorites. So when we decided it was Muffin Night, there was a race to the counter.
These muffins turned out fantastic! They had the perfect amount of chocolate and were soft and moist to eat. The whole family loved them. Even our daughter, who typically will only eat Blueberry Muffins, ate a couple. If you have been on the hunt for a great muffin recipe, we highly recommend this one.

Just use blueberries instead of chocolate chips–no need to find a new recipe! I put chocolate chips in “blueberry” muffin batter all the time!

I actually like the muffins over cake or pie since it’s automatically portioned controlled and easy to grab on the run. When I lived in Denver and had to remember to adjust for the altitude, I had some bakery flops.
