I have been trying to watch my family’s sugar intake lately, especially when I am baking and purchasing snacks. This had me on the hunt for products sweetened with something other than sugar, corn syrup, fructose, and all of the other names used for sugar. Then I came across Lilly’s Sweets. Founded in 2011, they have created a line of Fine Chocolate products that are sweetened with Stevia instead. For those unfamiliar with Stevia, it is a plant derived botanical sweetener that comes from Stevia rebaudiana. Stevia can be used as a sweetener in place of sugar but carries none of the unhealthy side effects. It is even safe for diabetics because of its low glycemic index.

Lily’s Sweets sent me a variety of their Chocolate Products to try. So I headed to my kitchen to use them in a couple recipes I was adapting to my Trim Healthy Mama program. First up, I tried a recipe that was shared on the THM Facebook Group:
Home Made Chocolate Milk Shake – THM Style:
Add all ingredients into a quality blender.
~1 Cup Almond Milk
~1 Scoop Protein Powder
~2 Tablespoons Cocoa
~1 Tablespoon Sweetener (I use Truvia.)
~1/2 teaspoon Xanthan Gum
~1/4 Cup Cottage Cheese
~Swirl Of Heavy Whipping Cream
~1/2 teaspoon Vanilla
~1 Tablespoon Coconut
~1 Tablespoon Coconut Oil
~1 Ounce Lily’s Sweets Chocolate Bar
~12 Ice Cubes
Blend all ingredients thoroughly and serve immediately. Can be topped with a squirt of Redi-Whip and fruit. This dessert is rich and delicious. I’m amazed at how closely it resembles ice cream!
Next up, I had a Zucchini Cake Recipe I received from an old neighbor that calls for Chocolate Chips. Since regular chocolate chips are full of sugar, I was thrilled to have Lily’s Premium Baking Chips to add to the recipe instead. While I didn’t get any zucchini planted this year, thankfully, I have some friends and family who did and have some to spare.
Chocolate Chip Zucchini Cake:
~1 3/4 Cups Almond Flour
~3/4 Cup Coconut Flour
~1/4 Cup Cocoa Powder
~1 Teaspoon Baking Soda
~1/2 teaspoon Baking Powder
~1/2 Cup Almond Milk
~1 teaspoon Vinegar
~1/2 Cup Butter, softened
~1 1/2 Cups Truvia
~1/2 Cup Coconut Oil, melted
~2 Eggs
~2 teaspoons Vanilla
~2 Cups Grated Zucchini
~1 Cup Lily’s Sweets Chocolate Chips
Preheat oven to 325 degrees. Grease a 9*13 pan.
Combine flours, cocoa, baking soda and baking powder in a bowl.
In separate bowl, combine milk and vinegar. Let sit for 5 minutes. Add into first bowl.
Mix.
Add butter, Truvia, coconut oil, eggs, and vanilla.
Stir till combined.
Fold in Zucchini. I always add a handful of chocolate chips to the batter as well.
Spread evenly into pan.
Sprinkle with Lily’s Sweets Chocolate Chips.
Bake for 45 to 60 minutes or till done.
Cool slightly before cutting.

I only use stevia now in my coffee and tea, so I would love to try this chocolate. I’ve never seen dark chocolate baking chips but know they are better for you.

I’ve been meaning to try a chocolate zucchini recipe for a while. I suppose it’s too late for this year, but I’ll pin this recipe for next year! I like the idea of adding the chocolate chips into the mix as well as on top.

Hi, I just made the shake and it was delicious. I was wonder if this is considered an S snack. I didn’t add the Gluccocaman(sp?) or the coconut or heavy cream ingredients because I either didn’t have it or didn’t have enough. Is it still on plan?

I love the Chocolate Chip Zucchini Cake recipe. It’s a great way to sneak veggies in when you can’t get kids to eat them at all. They will certainly eat this and never know it has a veggie they hate …lol Thank you for sharing!
