I have a round silicone pan that I love and have used for biscuits for years but have just recently discovered the Creative Cookiez Silicone Baking Cups for muffins, cupcakes, and other goodies. Since I love making fresh muffins for breakfast and occasionally make cupcakes for dessert, I was really excited to try these out.
I was craving a treat so I decided to make my Trim Healthy Mama Black Bottom Cupcakes. I originally got this recipe from my mother-in-law because they are my husbands favorite and adapted them to be on-plan for THM so I could enjoy them too.
Black Bottom Cupcakes Recipe:
~Filling~
8 Ounces Cream Cheese, softened
1 Egg
1/3 Cup Truvia
1/8 Teaspoon Sea Salt
Combine these ingredients into a small bowl. Beat well. Stir in 1/2 bag of sugar free chocolate chips. Set aside.
~Base~
3/4 Cup Almond Flour
3/4 Cup Regular Oats (Ground Up Into Flour)
3 Tablespoons Coconut Flour
1 Cup Truvia
1 Teaspoon Baking Soda
1/4 Cup Cocoa
1/8 Teaspoon Sea Salt
1 Cup Water
1/3 Cup Olive Oil
1 Tablespoon Vinegar
1 Teaspoon Vanilla
Beat the base ingredients together in medium sized bowl till well blended.
Fill cupcake liners 1/3 full of Base Mixture.
Top with a heaping teaspoon of Filling Mixture.
Bake at 350 degrees for 25 to 30 minutes.
Makes 24 cupcakes.
This is an S Dessert and so very delicious!
I really like finding products that are eco friendly and was thrilled to discover these reusable liners. They are so easy to use and clean. No cooking spray or anything needed! The cupcakes came out of these perfectly, even when they were about five minutes fresh from the oven. Plus, everyone loves the bright fun colors. I love my colored silicone baking cups. They are a different brand but work the same and I am sold on silicone baking items and want to collect more!
