Zucchini Spaghetti Boats Recipe, Pizza, Vegetable, THM, Trim Healthy Mama

Even though the deer got my pepper and tomato plants this Spring, they seemed to have left my zucchini plants alone as I have an abundance of this vegetable right now.  I was trying to give some away the other evening and my brother-in-law suggested I make Zucchini Boats out of them (as that is what his wife had made last week.)  He said they were good, but still zucchini.  Although he didn’t know the exact recipe and just mentioned beef, onions, sauce, and cheese, he gave me an idea.  So I threw together this creation for my family today.

Zucchini Spaghetti Boats

~1 pound ground beef
~1 jar spaghetti sauce

~1 medium sized onion
~seasonings
~zucchini
~shredded cheese
~Optional:  additional toppings (pepperoni, mushrooms, peppers, etc.)

Cute zucchinis in half and clean out seeds.  Also take out most of the pulp and save for next step.

I placed the hamburger, onion (chopped), zucchini pulp, seasoning salt, garlic salt, onion salt, pepper, and Italian seasoning in a frying pan.

Brown all ingredients together until the meat is fully cooked.

Pour in half a jar of spaghetti sauce.  (You could also substitute for a pizza sauce.)  Mix.

Line gutted zucchinis on a pan with a ledge to catch any juices.  

Place meat mixture inside each zucchini.

(This is where I’d also top with extra ingredients but they could also be cooked into the sauce earlier.)

Top with remaining sauce.

Finish off with shredded cheese.

I loosely covered with tinfoil to avoid drying out the zucchini.

Bake at 375 degrees for about 35-45 minutes.

My husband, son, and I all three thought it was really good while two of our boys (ages 4 and 3) didn’t try it and our daughter took a mouse sized nibble.  I choose to serve with a side salad and Dreamfield buttered noodles.  These Zucchini Boats had very little “zucchini” taste and were actually quite filling!  I definitely plan to make them again as they were a fairly quick and healthy meal!

THM NOTE:  Just be sure to use on-plan sauce alternatives or even a home made version.  Also keep in mind that while pasta can be served in an S setting, be aware of serving size.
