While I’m not the bravest in the kitchen, I do try new recipes from time to time. We dairy farm so, even though it drives my husband nuts some times, I enjoy having meals with chicken from time to time. (He thinks because we butcher our own heifers that we should stick to eating only beef.) It’s funny though because he sure does rave about some of my dishes that contain chicken! One dish in particular that he favors is my Creamy Chicken Torillas. I got this recipe from an awesome friend about 10 years ago and have perfected it for my family.
Creamy Chicken Tortillas
Ingredients:
- 3/4 cup mayo
- 3/4 cup flour
- 4 1/2 cups milk
- 3 cups shredded cheddar cheese
- 2# chicken breasts, cooked and cubed (pan fry, bake, or purchase pre-cooked)
- 3/4 cup salsa (choose mild or hot based on family preference)
- 15 (6″) tortilla shells
- parsley
Step 1: Heat the oven to 375 degrees.
Step 2: In a kettle on medium heat, whisk mayo and flour together while slowly adding milk.
Step 3: Bring to a boil, whisking or stirring constantly and cook till thickened.
Step 4: Add 1 1/2 cups shredded cheese and stir well.
Step 5: Take 1/3 of the white cheese sauce and set aside for later. (The measurement does not need to be exact.)
Step 6: To the 2/3 sauce mixture still in the kettle, add: cubed chicken, salsa, and 1 teaspoon parsley. Mix well.
Step 7: Cut tortilla shells into quarter sized pieces and mix into kettle mixture.
Step 8: Spray or grease a 9×13 pan and pour mixture in.
Step 9: Top with the 1/3 white cheese sauce.
Step 10: Sprinkle a layer of cheese over the top and add a little sprinkle of parsley.
Bake for 25 minutes or till the cheese is bubbly and slightly browned. Remove from oven and let set for about 5 minutes. Then serve and enjoy! It’s creamy, flavorful, and absolutely delicious!
This recipe should easily feed 6 adults and possibly more depending on what side dishes you serve with it. It’s always a crowd pleaser for me and I repeatedly get requests for the recipe. Bon Appétit!

Just pinned this for future reference. This is exactly the type of meal that is always a hit at our house. I love the idea of cutting up the tortillas–so much easier to serve and eat than layering or filling and rolling them. Thanks so much for sharing your recipe!
