Today feels like a cool fall day. Around 12:30 AM it started raining. We haven’t had rain for quite a while. It is also quite a bit cooler today than it has been. It feels great. The first rain of fall is so refreshing. It cleans everything from the dust on your vehicle to your soul. I love it.
The change in weather has me thinking of fall recipes. One of my favorite meals during the fall is soup. I like to combine the last harvested veggies from our garden to make a delicious, hearty, and healthy soup.
Today I am going to share with you a Tasty Twists on Nutrisystem’s Mushroom Risotto meal. This spin turns the Mushroom Risotto into a Veggie Lover’s Risotto Soup.
Ingredients-
1 tsp. olive oil
½ cup diced yellow onion
1 cup diced zucchini
1 cup sliced baby bella mushrooms
2 cups vegetable broth
1 package Nutrisystem Mushroom Risotto
1, 14.5 oz. can diced tomatoes
1 cup kale, ribs removed, roughly chopped
Salt and pepper, to taste
*I have a lot of mustard greens growing. I would add those into this recipe too!
Directions-
Heat olive oil in a large pot over medium heat.
Add onion, zucchini, and mushrooms. Sauté for 8 to 10 minutes, until the vegetables begin to soften, stirring occasionally.
Add broth, risotto, and tomatoes. Bring to a boil; lower the heat to medium-low and simmer for 5 minutes.
Add kale and simmer for an additional 3 minutes.
Stir soup and season with salt and pepper before serving.
The recipe above makes two servings.

This looks so good. I make a vegetable soup for my good comfort meal. I just chop everything fresh I can find, add chicken broth and voila … there is soup. Thank you for your version.

Such a great way to use up your garden’s bounty.
This looks good. What I like is it would disguise kale. I have to admit not it being a favorite but knowng it is good for me. I like how rich tasting this sounds while being very low calorie.
