About a year and a half ago, I began making changes in my life so that I could live healthier and happier. I was morbidly obese (BMI standards) and was really depressed. It saddened me to be so miserable when I had so many blessings in my life. Some of the changes I made were small and others were more drastic. Together these changes lead to me loosing over 50 pounds and gaining a whole new perspective on life. I am not the person I was back then; I am, in my opinion, a much better wife, mom, daughter, sister and friend. I enjoy life now.
Some of the changes I made were with our meals. I learned what a proper portion was and stuck to that serving size. I learned how to incorporate more fruit and veggies into our daily diet. I also learned to set higher standards for the ingredients we use when preparing our foods. I have come to depend on Jennie-O products.

I plan to share some of those new recipes with you real soon. Today, I want to share a delicious Jennie-O recipe I found on their website, it is called Turkey Sausage & Pepper Breakfast Casserole.
To make Turkey Sausage & Pepper Breakfast Casserole you need the following ingredients:
- butter-flavored cooking spray
- ½ (14-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Patties
- 1 cup chopped green bell pepper
- 1 tablespoon freshly minced garlic
- 3 slices whole wheat sourdough bread, cut into 1-inch pieces
- 6 ounces shredded low-fat Cheddar cheese
- ½ cup finely chopped hot cherry peppers
- 2 ¾ cups egg substitute
The directions are:
Heat oven to 375°F. Mist casserole with cooking spray; set aside.
Place skillet over medium-high heat. Mist the skillet with the cooking spray. Add 6 turkey sausage patties. Cook the turkey sausage patties as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Chop sausage into pieces and transfer to a small bowl. Turn the heat to medium. Re-spray the skillet and add green pepper. Cook 4 minutes, stirring occasionally. Add garlic; continue cooking 1 to 2 minutes or until peppers are tender.
Arrange half the bread pieces in the bottom of prepared casserole. Top bread with half the cheese, half the bell pepper mixture, half the sausage and half the cherry peppers. Repeat layering. Pour egg substitute evenly over top. Cover and refrigerate 4 hours or overnight.
Heat oven to 375°F. Bake 45 minutes or until set.
I haven’t had a chance to make this recipe yet. We have a full weekend planned so I am going to try putting all the ingredients into my slow cooker Friday night. Saturday morning, we should have a warm, nutritious and delicious breakfast waiting for us!
