Lately I have been sharing family friendly recipes using Jennie-O turkey. Jennie-O offers several products made with turkey including ground turkey, turkey bacon and turkey sausage. They are all delicious and work well in a variety of recipes.

Today I am going to share a Veggie Frittata with Jennie-O turkey breakfast sausage. Originally this recipe used Jennie-O turkey bacon; however, my local grocer doesn’t carry that product yet. I swapped out the turkey bacon for turkey breakfast sausage.

Veggie Frittata with Turkey Bacon

Ingredients:

1 (8-ounce) package JENNIE-O® Uncured Turkey Bacon *I used a package of Jennie-O breakfast sausage

1 tablespoon vegetable oil

½ cup finely chopped red pepper

½ cup finely chopped green pepper

1 cup thinly sliced mushrooms

1 cup finely chopped asparagus *I used a cup of diced leaks

2 cups egg substitute or 8 eggs

¼ cup milk

1 tablespoon chopped fresh parsley

1 cup shredded low-fat Swiss cheese *I used Colby jack

⅓ cup thinly sliced green onions *I used white onions

Directions

Heat oven to 350°F. Mist 12 muffin cups with cooking spray (important!). Cook turkey bacon as specified on the package. Cut into ½-inch pieces and set aside.

In large skillet over medium-high heat, add oil, red and green pepper, mushrooms and asparagus. Cook 5 minutes, stirring occasionally, until vegetables are cooked.

In large bowl, whisk eggs, milk and parsley until well mixed. Stir in bacon, cheese, mushroom mixture and green onions. Spoon mixture into muffin cups, filling approximately ¾ full. Bake 20 minutes or until set. *Mine took 30 minutes to set. I also REALLY suggest placing a baking sheet or something under your muffin tin to catch the drips.

My family and I really enjoyed the Veggie Frittata with Turkey Sausage. It was a fairly quick recipe to prepare. We enjoyed the frittatas for dinner, however, they would also be delicious for breakfast or served at an Easter brunch.
