I have been striving to get my family to try some new foods and eat healthier. While I do feel that we do a fairly good job, I get bored with the same dozen meals that become our routine. One thing that I do enjoy sticking to is having a salad almost every day with our noon meal. While our youngest at almost 2 years old has turned his nose up at his mini salad every day, I continue to offer it to him and the rest of our kids each time. However, I was recently given a Check Fajitas recipe from a friend (her family recipe) and I decided that it would be a good kid-friendly food to try. I did make a few adjustments based on missing a couple ingredients but it turned out great!
Chicken Fajitas
~Canola or Olive Oil
~Onions
~Bell Pepper (I used Red and Yellow.)
~Garlic Salt & Garlic Garlic Seasoning from Pampered Chef (The original recipe called for finely chopped garlic cloves.)
~Chicken (I used pre-cooked.)
~Ground Cumin, Chili Powder, and Salt (I used Celtic Sea Salt.)
~Salsa
~Lime Juice (I substituted Lemon.)
~Shredded Cheese (I added this.)
~Tortilla Shells
Pour a thin layer of Canola or Olive Oil in the bottom of a frying pan. Sauté Bell Peppers and Onions on low for about 20-30 minutes.
Add Finely Chopped Garlic Cloves (or Garlic Salt and Garlic Garlic Seasoning like I did.) Continue sautéing.
Add 1/8 teaspoon Ground Cumin, 1/8 teaspoon Chili Powder, and the desired amount of Salt. Continue sautéing.
Add Salsa at the very end along with a squeeze of lemon or lime juice. I didn’t have any fresh lemons or limes so I just poured the desired amount of lemon juice into the pan. Continue sautéing for another few minutes.
Serve with warmed Tortilla Shells and top with Shredded Cheese. From start to finish, this took me about 45 minutes. However, I did keep my burner on low the entire time.
I paired this meal with fresh fruit and rice and it was absolutely delicious!
