Thank you to Earnest Eats for providing me with product, free of charge, for review. All opinions are my own.
Since beginning my quest to feeding my family healthier, I have been on the search for companies that provide wholesome products. Just recently I came across the company, Earnest Eats, whose mission is to “Create Whole Food Happiness” and they sent me some product to review.
My husband had been asking for some oatmeal for a couple weeks now but I just hadn’t taken the time to prepare any for him. So when the convenient single serve blend containers from Earnest Eats arrived, I was excited to be able to fulfill his request and grabbed a Mayan Blend Cup to go with his egg sandwich. After reading the directions, I was happy to see how easy Earnest Eats has made preparation. I just put some water in our tea kettle and heated to boil. Then, pour the water into the cup till it reaches the fill line and leave stand for 3 to 4 minutes. Stir and enjoy. As soon as my husband walked in for breakfast, though, he eyed up the container and asked what was in it. While he is a really good sport about trying new things, I’ve had a couple recipe flops lately so he was a little weary. But he willingly sat down to give our Earnest Eats products a try. Upon tasting, he was sold. He kept raving about how he couldn’t believe how good it was and asked when he could try the rest of the flavors!
Earnest Eats sent me a cookie recipe to try with their American Blend Cranberry Canister product. Since I was making these mostly for a snack for our children, I omitted 1/3 Cup Pistachios and added the chocolate chips and M&Ms.
American Blend Cranberry Cookies
~1 1/2 Cups Earnest Eats American Blend Hot Cereal
~1 Cup All Purpose Flour
~1 Teaspoon Baking Soda
~1/4 Teaspoon Salt
~3/4 Cup Coconut Oil, Melted
~3/4 Cup Brown Sugar
~1 Large Egg
~2 Teaspoons Vanilla Extract
~1 Cup Shredded Coconut
~2 Teaspoons Water
~1/4 Cup Chocolate Chips
~1/8 Cup M&M’s
1:) Preheat oven to 325 degrees.
2:) In a medium bowl, whisk flour, hot cereal, baking soda and salt. Set aside.
3:) In a large bowl, beat with an electric mixer: melted coconut oil and brown sugar until smooth. Add in egg, water, and vanilla. Beat again for 2 minutes or till smooth.
4:) Add dry mixture to wet ingredients, mixing till well combined. Add in coconut, chocolate chips, and M&Ms and mix again.
5:) Roll into 1 inch balls and place on cookie sheet. Bake for 9-11 minutes or till edges start to turn golden brown. Remove from oven and let cool for a few minutes before transferring to a wire rack.
These cookies were quick and easy to make. The results: Delicious!
We also got to try an assortment of Earnest Eats Bars. Again, each flavor we tried was a big hit. They are soft, chewy, and everyone thinks they are yummy. It’s been a race to eat them before they are gone because everyone wants their share!
