I love quinoa, but I have to be creative when I serve it to my family. I get the best reactions when I mix quinoa in a salad or another big combo dish. They seem to prefer it as a background ingredient rather than the main ingredient. Crazy picky eaters!
I recently discovered a brand called Path of Life. They make delicious and nutritious quinoa salad blends. The Path of Life blends are very versatile in that they work great as a meal for one, side dish for a few or a dish you build upon. Path of Life quinoa salads are available in four varieties: All Natural Southwest Quinoa, All Natural Mediterranean Quinoa, Organic Quinoa & Kale, and Organic Quinoa & Brown Rice. They are a great source of iron and protein and are low in calories. Path of Life quinoa packets are located in your freezer section. They heat in only 4 short minutes in their microwavable pouch.
Tonight, I am serving a cold summer salad using a Organic Quinoa and Kale salad blend. I am adding chopped bacon, almond slivers and chickpeas. This is a family approved combination!!
While visiting the Path of Life website, I noticed they have a recipe tab. I found a recipe for Poblano Peppers Stuffed With Southwest Quinoa.
Ingredients:
1 – 10oz bags of Path of Life Southwest Quinoa
Chorizo Crumbles
½ cup – refried beans
½ cup – shredded cheddar cheese
¼ cup – warm water
5 Poblano peppers
Enchilada Sauce
Fresh Cilantro
Instructions:
Preheat oven to 400 degrees
Pour a little of the sauce onto the bottom of each pan
Place pan in oven uncovered for approx. 15-25 min, until stuffing is hot
Heat the rest of sauce
Place stuffed peppers on serving plate
Pour warm sauce over the peppers
In a mixing bowl add POL SW quinoa
Mix in cooked(room temp or cold) chorizo crumbles
A little bit of canned refried beans to bind
Mix in shredded cheddar cheese
Add a touch of warm water
Mix all ingredients together until it the mixture can form a ball, if it does not form a ball(too dry)….you can add more beans or water to help bind
Cut poblanos in half lengthwise, remove stem and seeds
Fill the halves with chorizo, cheese and quinoa filling
Place in freezer for a few minutes to set or over night
YUMMY!

Making quinoa from scratch is a little tedious since I soak it overnight, changing the water several times to make sure it’s ready to cook. It would be great to try something all ready to cook like these dishes.
