This time of year, fresh zucchini is plentiful! My aunt blesses us each year with zucchini from her home garden. If I am making dinner with zucchini, I usually end up making stuffed zucchini boats or my version of zucchini spaghetti. Both are family loved recipes.

Last week, I made I made a new twist on my spaghetti recipe. I used Jennie-O Lean Italian Seasoned Ground Turkey. I browned the turkey with a diced onion. I made a creamy sauce using warmed cream cheese and fresh Italian seasoning blend. I mixed the turkey with the creamy sauce and let it simmer for a while. While that was going on, I used my vegetable spiralizer to make a large bowl of zucchini noodles…make extra because they really cook down. I blanched my ‘noodles’ and then added them to my creamy turkey mixture and tossed until coated. My zucchini spaghetti was delicious; everyone had seconds!

When I make zucchini boats I use a similar process. I take a zucchini and slice it in half length wise.  I scoop out the seed and some of the flesh. I stuff my boats with browned Jennie-O ground turkey and whatever other toppings sound good that night- black beans with salsa or rice and tomatoes, and then I sprinkle on some cheese and bake. Depending on the size of the zucchini, I bake on 350 degrees for about 20 minutes. I want the cheese melted but I don’t want the zucchini to be limp…I want it to still have a bite to it.
