I get bored making the same recipes over and over, so I recently was browsing this Kraft recipes page and fell in love with the Totchos bar recipe. It uses tater tots, chorizo and a combination of cheese to make a spicy, cheesy meal that can be customized to your liking. I love chorizo and spicy food in general so I decided to give this a try. I ran to Walmart to grab all of the ingredients I needed.

Totchos ingredients

The recipe calls for:
1bag (32 oz.) ORE-IDA Tater Tots
12oz. chorizo
1/2cup onion, diced
2cloves garlic, minced
1 can (4 oz.) diced green chiles
2Tbsp. butter
1-1/2cups milk
1block (1/2 of 8 oz. block) KRAFT Natural Chunk Pepperjack Cheese, grated
1block (1/2 of 8 oz. block) KRAFT Natural Chunk Monterey Jack Cheese, grated
1bag (16 oz.) KRAFT 2% Mexican Cheese Blend
1tub (1/4 of 8 oz. tub) PHILADELPHIA Spicy Jalapeno Cream Cheese
2Tbsp. cilantro, chopped

I followed the recipe pretty closely, but I did not use the diced green chilies just as a personal preference.

I browned the chorizo, then used the pan to heat up the onion and garlic. In a separate pan you melt butter, then add milk and the cheese until it’s all melted. In your oven or deep fryer you cook the tater tots. Once everything is ready you combine the three however you choose. You could layer them sort of like a casserole if you wanted. I did this at first but the cheese-mix was thicker than I had expected it to be (it wouldn’t drizzle very well) so I opted to dip my tots in the cheese mix and then dip the cheesy-tot in the chopped up chorizo because it would stick thanks to the thick cheese. I think my cheese mixture was thicker than it “should” have been per the recipe because I made the mixture on a lower heat so it cooked too long and lost some moisture – I could have added a bit more milk to thin it back out but it was perfect as-is in my opinion. It was delicious, spicy and extremely filling.

Cheesy Chorizo Totchos tater tot nachos. Combine jalapeno cream cheese and spicy shredded cheese with chorizo sausage for this satisfying dinner or party food.

I cut the recipe in half and it was enough for four adults as a dinner, so the full recipe really makes a lot which is perfect as a party food.
