I started counting calories and focusing on protein, fiber and healthy fats around July. Since then I’ve learned that switching brands on everday items like bread can make a big difference in the nutritional profile of what I’m eating. Bread products in particular seem to have a wide range of differences when you compare nutritional profiles when it comes to protein and fiber.
Brownberry makes breads that line up well with my desire to get protein and fiber into my diet. They recently reformulated their 100% whole grain wheat bread. The loafs are shorter and wider than many other brands, which results in each bread slice being quite a bit bigger than other brands that I’ve purchased in the past. These wide slices lend themselves perfectly for sandwiches. The other day I was craving something warm for breakfast because it was chilly. I decided to throw together a homemade version of an egg & ham breakfast sandwich.
I started out by frying an egg. If you have a really nice non-stick pan there is no need to grease the pan at all. My pan isn’t top knotch so I use 0-calorie olive oil spray lightly to prevent sticking. I prefer to fry my egg on both sides but you can scramble or do a sunny-side up egg instead if you prefer. Once the egg was finished I moved it to a plate and threw in four slices of sliced ham to warm them up a bit. Once the ham was fried I removed it from the pan and sprayed the backs of two pieces of Brownberry 100% whole grain wheat bread with 0-calorie butter spray to prevent sticking. I piled the egg and ham between the slices and waited until each side of the bread was lightly brown. Once finished I cut in half and took a bite. Yum!
I keep track of my calories and nutrition. My sandwich worked out to 330 calories, 26g of protein and 6g of fiber which is a great way to start my day off. The bread is 100 calories per slice, 4 protein per slice and 3 fiber per slice. My egg was 70 calories and 6 protein. My serving of ham was 50G (a little shy of 2oz) which worked out to 60 calories and 6 protein.

We buy Brownberry breads all of the time! I love how healthy it is, and it is also really good so it definitely enhances a sandwich! I love your quick breakfast sandwich idea, I do this often except I add my guilty pleasure… Cheese! 🙂

That is a lot of protein, which is good because I don’t eat a lot of protein lately. Some mornings I up my protein with some greek yogurt in a smoothie.

I would love this sandwich except the egg would have to be not runny as I dislike egg yolks that way. A nice warm sandwich like this in the morning would set my day off very well indeed!

Mmm, looks an awful lot like the sammie I had for breakfast this morning, except I used summer sausage instead of ham.

I used to eat brownberry bread too, until we had to cut out grain/gluten. They always made great sandwich bread.

Fiber foods like this really help keep me satisfied, especially through the morning. This sandwich recipe is good anytime, especially in the morning rush.
