The incredible edible egg. Sounds simple enough. At least that’s what my 16 year old self thought. The morning after my boyfriend’s sister got married, I showed up at his house and he hadn’t yet eaten breakfast. So I thought I’d make him a few fried eggs. Even though I had never really cooked before, (I loved baking instead), I thought there was no way to mess up eggs, right??? Well, it turns out you can. How was I supposed to know that you had to grease the pan!?! Those cute little eggs stuck so bad it was ridiculous. Thankfully, his aunt had spent the night and took over the mess I had made. It took me two years before I attempted eggs again. Now, as a wife to one and mom to five, I make eggs multiple times a week as they offer flexibility in the many ways they can be prepared.
So while most of the kids and I prefer just a simple scrambled egg, my husband loves an omelet. So, to celebrate National Egg Day, I whipped up my husband his favorite.
Super Dad Omelet
- 4 Eggs, Slightly Beaten
- 2 Tablespoons Milk
- Mushrooms
- Peppers
- Onions
- Salt, Pepper, & Bacon Bacon Seasoning
- Parsley
- Shredded Sharp Cheddar Cheese
- Sliced American Cheese
- 1 Teaspoon Coconut Oil
Prepare all ingredients including: Add the milk and eggs together and beat. Also, slice and dice the mushrooms, peppers, and onions.
For the Omelet: Start by melting the coconut oil in a Calphalon Classic Fry Pan over low heat. Then, pour in the egg mixture and sprinkle salt, pepper, and bacon bacon over top. Place cover on pan and cook till egg has set, about 5 minutes on my stove top. Remove cover, flip the egg in one swift motion, and place sliced cheese, veggies, and parsley over half of the egg. Replace cover and let cook for another 3-5 minutes or until cheese starts to melt. Fold the omelet in half to cover the veggies and cheese and place on a plate. Garnish with additional parsley and shredded sharp cheddar. Serve!

I don’t have a family to cook for so think I could get away with just one of these beauties. I bet they have some good sales, although sometimes the sets are more economical to purchase. I love making veggies omelets too.
