This past May, our current music teachers told us that they were going to quit teaching lessons. They had come to us for almost two years and were an answer to prayer as I had been almost 9 months pregnant with #5 and to the point where I needed someone to commit to coming into our home to teach piano, violin, and guitar, or else we needed to quit. So we were sad to see this chapter close and were, once again, on the hunt. Thankfully, my husband’s cousin mentioned a name in passing and I decided to give them a call. They are a musical family who go around playing at nursing homes, festivals, fairs, and other events but agreed to take us on. Even though we now have to venture out for lessons each week, this family has been another huge blessing for us.
Throughout the summer, we watched their amazing garden grow and flourish and even were gifted some of their abundance. Now, just this past week, I was handed a pumpkin squash on our way out and told they make amazing muffins that kids love if you toss in some chocolate chips. So, I was excited to give it a try. Then, today when I decided it was a great day to bake, I realized I had NO idea on how to actually turn this squash into something useable.
I googled and just kept coming up with recipes so then I made phone calls until I found some help. I guess all you do is cut it in half, turn the halves upside down on a baking sheet, and bake till soft! So easy! After getting our pumpkin squash soft, cutting off the inside, and mashing, it was time to make the muffins.
Pumpkin Squash Muffins Recipe:
- 1 medium (pumpkin) squash
- 3 eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 1/2 cups white flour
- 1 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1/2 teaspoon salt
- 3/4 teaspoon nutmeg
- 3/4 teaspoon cloves
- 1/8 teaspoon ginger
- 1 1/2 cups chocolate chips
- cinnamon & sugar mixture
1:) Preheat the oven to 400 degrees.
2:) Mash eggs, water, vegetable oil, sugars, and squash together in a large bowl.
3:) Whisk in all remaining ingredients EXCEPT the chocolate chips until a smooth batter is formed.
4:) Fold in chocolate chips.
5:) Fill a muffin pan with liners and spoon in batter 1/2 to 2/3 full. Top with a sprinkle of cinnamon/sugar mixture.
6:) Bake muffins for about 12-15 minutes or till a toothpick inserted into the center of the muffins comes out clean.
7:) Cool in pan for 5-10 minutes before removing.
8:) Enjoy!
Our family has loved this recipe and the kids devour these muffins, completely forgetting that they have healthy ingredients in them! This is a perfect fall snack and a fun way to bring in the new season.

Thanks for sharing your recipe for pumpkin squash muffins. I plan on trying them for Thanksgiving Day, so I hope I can follow your directions correctly. As soon as I saw one of the ingredients was chocolate chips, I knew I was going to try them out.

I love to bake during the holiday season and these look so yummy. Instead of the chocolate chips I might try dried cranberries instead. I will let you know how they turn out.

Both November and December are prime months for baking all things pumpkin and squash at my place. They have such huge ones at the market and I try to get them for baked goods when they go on sale. Muffins are a favorite and easy to bake.

What I love about this is the addition of the chocolate chips! Because if it has choc chips my kids are more willing to eat it. And the cinnamon/sugar mixture sprinkled on top is always delicious!
