We are in the middle of back to back storms. We are getting hit with several inches of rain and gale-force winds. The first of the storms hit last night. The next “big one” is predicted to hit Saturday night. To prepare for the storm and our power possibly going out, I decided to make a big batch of turkey noodle soup in my slow-cooker. This recipe really could not be much easier.

INGREDIENTS

1 whole diced onion (I used a white onion)
1-2 pounds of carrots diced
3 cans of chicken broth
3 cans of vegetable broth
1 package of Jennie-O boneless turkey breast tenderloins (thawed)
2 cups of noodles
*This is a flexible recipe. Feel free to add any vegetables you have on hand- fresh, frozen, or canned.

DIRECTIONS

Add your onion, carrots, broth, and boneless turkey breast tenderloins to your slow-cooker. If your slow-cooker has a manual temperature setting, put it on low for all day cooking or high for faster cooking. Once your turkey has reached an internal temperature of 165°F, you can use two forks to shred it. I usually pull my tenderloins out of the slow-cooker to shred and then place them back in when I am done. Now is the time to add your noodles. It is also a good time to check your seasoning. You can add salt, pepper, or any seasonings you wish. Let the noodles cook for about 20-30 minutes (depending on how thick your noodles are). That is it! Soup-er easy, right?!

    We love Jennie O products. They are always good and always fresh. I like how they make different products for different needs. Turkey noodle soup looks terrific. Comfort food always makes things a bit better and it is sure easier on the cook- especially if there are other things happening.
