Are you looking for a fun way to get an extra serving of veggies? Healthy Buffalo Veggie Tots are delicious as well as nutritious! They are also super easy to make.
Ingredients
2 cups of shredded veggies- I used a blend of broccoli, cauliflower, and carrots. You can use any veggies you have on hand. To make things easier, I shredded the veggies in my food processor. Be careful to not puree your veggies. You want them to have a rice texture.
1 egg
1/3 cup panko bread crumbs
1/3 cup seasoned bread crumbs
1/3 cup Frank’s Buffalo Sauce
1/4 tsp. salt
Directions
Preheat oven to 400°F. Add salt to the shredded veggies and let is sit for at least 20 minutes. This will draw out the moisture. Use a dish towel to wring out the liquid. This is the most important step. Make sure you wring out as much liquid as you possibly can. (This liquid can be stored and used in soups.) Add the remaining ingredients and blend well. Using a TBS or scoop, make the veggie blend in a tot shape. (roll a snake and pat the ends). Place veggie tots on a baking sheet lined with parchment paper or a pizza tray. Bake for twenty-five minutes. Healthy Buffalo Veggie Tots are delicious served with Greek yogurt, ranch or blue cheese dressing.
My kids LOVE Healthy Buffalo Veggie Tots. They beg me to make them for their school lunches. Healthy Buffalo Veggie Tots are also a crowd pleaser at potluck parties and tailgating.

These look and sound delicious. They actually would remind me of aa Chinese spring roll I bet they would be great with sweet and sour too. I would imagine any vegetable would work. I wonder if I can pass of zucchini like this?
