Let’s talk about Okra today! Okra is pretty new to me. It isn’t a veggie that a lot of Oregonians talk about. I don’t know if they are all eating it and not sharing it with me, or if it just isn’t as popular on the West Coast as it is down south. Either way, I have now discovered Okra.

Studies show that Okra has many benefits including but not limited to the following:

  • Reduces Acid Reflux
  • Aids in Digestion
  • Reduces Risk of Heart Disease

  • Rich in Amino Acids
  • Reduces Obesity
  • Prevents Anaemia
  • Protects From Free Radicals
  • Promotes Good Bacteria
  • Reduces Scars, Acne, and Wrinkles
  • Anti-Inflammatory
  • Mood Enhancer
  • Relieves Allergies
  • AND more…

Sounds like a superfood, right?! Knowing what I now know about Okra, I decided to start adding it to my everyday menu. I began by coming up with a flex protein snack with okra being the star ingredient. My Spicy Oven Fried Okra recipe is super easy, healthy and quite tasty if I do say so myself!

Ingredients-
12 ounces of chopped okra
1 tsp of oil- I use avocado, but you can use coconut or any other oil you wish
1/4 cup grated parmesan
a sprinkling of cayenne pepper (as much as you wish)

Directions-
Toss your chopped okra in the oil until all is coated. Then add your parmesan and cayenne pepper. Toss again until each piece is dusted with the dry ingredients. Place your okra in an oven safe baking dish. Roast on 425º for 12-15 minutes…until golden brown. Snack and enjoy!

    Yummy, your okra recipe sounds delicious! I live in the south but I definitely only like okra fried. I will have to try this soon, thanks for sharing! 🙂

    This sounds really good. I garden and am growing it for the first time this year. It isnt something normall grown here but my neighbor loves okra. I only eat it fried, but this might be a good solution because I am trying to stay away from fried foods.
