Last November, I switched to a gluten-free lifestyle. In the beginning, I completely cut out all grains for fear of accidentally eating something with gluten. As I became more educated in the world of gluten-free foods, I learned which grains were safe to add back into my diet. Quinoa is one of them.
I make quinoa a few times a week. The trick is coming up with different ways to serve it so that we don’t become tired of it. While searching for quinoa recipes, I stumbled upon a company called Ancient Harvest. Ancient Harvest offers an assortment of foods made with quinoa including, Supergrain Pasta, Heat-And-Eat Quinoa packs, Polenta and more.
Ancient Harvest’s Supergrain Pasta and Heat-And-Eat Quinoa packs are delicious. They have good flavor and a nice texture. We tried a few new recipes with them. Easily our favorite was the night my oldest daughter made dinner using the Supergrain Pasta Garden Pagodas. She followed the recipe on the side of the box for Lemon Garlic Parsley Pagodas. It was SO good! That recipe will be a repeat for sure!
The polenta was a completely new food for us. I had never prepared polenta nor eaten it. I looked at the Ancient Harvest website for recipe suggestions. I decided that if I was going to win over my picky kids, I needed to choose a fun recipe. I decided to make Polenta Pizza Bites. As per the recipe, I sliced my polenta and baked it. Then I topped it with GF sauce, cheese, and browned Italian sausage. Then, baked the pizza bites again to melt the cheese. The Polenta Pizza Bites were better received than I had anticipated. I thought they were tasty and filling!
I am glad we were tried Ancient Harvest. I plan on purchasing more of their foods.

Hello, my name is Laurie. My family and I live near the Oregon coast. Yum! These polenta pizza bites sound delicious! I love that they are gluten free, as I can’t eat it. I will definitely be trying these very soon. Thank you so much for sharing!

Thanks for the reviews and ideas. My mother lives with us and has celiac disease so we have to make sure that our meals are gluten free for her.

The polenta pizza bites look really good, I too have never tried polenta.
