Ah, summer! Summertime usually has us longing for frozen desserts. Most of the desserts available are full of sugar, artificial flavoring, coloring, preservatives and other yucky ingredients that can’t easily be pronounced. Who wants to eat that?! Not me!
After a long day of shopping, cleaning, and packing for a trip, my daughters and I were craving a frozen dessert. I decided to get out a few ingredients and see what I could come up with. The end results was a Keto Frozen Whipped Cream Dessert. It was delicious and satisfied our cravings.
Ingredients:
3 cups of heavy whipping cream
1/3 cup of sugar substitute (I use Lakanto Monk Fruit)
1 TBS vanilla
2 TBS finely grated low/no sugar chocolate (I use Lindt 95% Cocoa EXCELLENCE Bar)
Tools:
Chilled mixing bowl
Spice grater
Stand/hand mixer or whisk
Rubber spatula
Directions:
In a cold mixing bowl, combine the heavy whipping cream, sugar substitute, and vanilla. Whip on high speed until you have stiff peaks. Stiff peaks are when the cream holds its shape and doesn’t fall over. This only takes a few minutes. If you over whip, you will end of with butter so be careful. Once you have stiff peaks, then gently fold the grated chocolate pieces into the whipped cream. With the blade of your rubber spatula, go through the middle of your whipped cream, scoop the topping and fold it over onto itself. Scrape the whipped cream from the sides of your bowl and repeat. Once you have completely incorporated the chocolate into the whipped cream, place the bowl in the freezer. Let the whipped cream chill for one and a half to two hours. You want it frozen, but still scoopable. Serve in a cool class and enjoy!
This Keto Frozen Whipped Cream Dessert would be wonderful with a sprinkling of cinnamon and chopped nuts. It would also be delicious with fresh berries and a mint sprig.
Do you have a favorite summer frozen dessert?
Keto people, the recipe above made 8 servings. I am still not 100% sure how to calculate nutritional data. I would feel terrible if I miscalculate and gave you the wrong information, so I just don’t give any. If you know how to calculate this accurately, I would appreciate you sharing with me.
Hello, my name is Laurie. My family and I live near the Oregon coast. When we aren’t at work, in school, or on the volleyball court, we enjoy traveling, cheering for our favorite sports teams, playing outdoors, and checking off items on our bucket list. We are lucky in that both sets of our parents, as well as our siblings and their families, live within an hour of us. We get together often to help one another out, celebrate milestones, and go on adventures together.

This sounds absolutely delicious and so easy to make!! I don’t have any heavy whipping cream otherwise I would make some right now!! I definitely can’t wait to try this, and I love that it is a lot better than store bought sugar-filled ice cream. Thank you so much for sharing your recipe! 🙂

Although I am not on the keto diet, I do see a lot of recipes that would be awesome to try for a healthier dessert option. I like the Lindt cocoa bar that’s used in this, I’ve had it before & it would be a great addition.
