Why We Chose An Induction Stove (And The Best Cookware For It!)
Ever have one of those years? You know, where EVERYTHING seems to break down and need repairing or replacing? In the past three months, we have had to replace our washer, dryer, refrigerator, and stove! OUCH! With every single one being a ‘large’ purchase, I wanted to be sure we got items that would be a good fit for our family. Being a large family of 10 currently (which includes two foster loves), the washing machine and dryer were an emergency. So we went to the local shop and asked what they had in stock. LOL. Check. For the refrigerator, we had specific details in mind that we wanted. With those requests made, there was literally one refrigerator to choose from. Check. Now the stove. This wasn’t an emergency as it was still somewhat working. That meant I had time to do a little research and looking.
Gas, Electric, Or Induction
I have always had a gas range. Growing up as a kid, that’s what my parents purchased and I still remember my dad having to lift the top to ‘light the pilot light’ from time to time. When my husband and I got married, I chose a gas stove because it’s what I was familiar cooking with. (Plus, the only electric stove I had ever seen was my grandma’s with the coils on top; which I thought looked ugly.) The only other option was induction, which I was originally clueless about.
Several months ago, my favorite burner quit working on our gas stove. Everything I tried to fix it, including all help found on You Tube, failed. So that, coupled with the fact that I…COULD…NOT…GET…THE…TOP…CLEAN; made me antsy to get a new stove. Off to the appliance store we went!
Now, I went in with an open mind. I LOVE the look of the new electric ranges so I was leaning more towards going that route. However, when chatting with the salesperson, they said “I’ve never had someone move from gas TO electric.” So that made me nervous because there must be a reason why, right!? When I told them my hesitation about another gas stove and the difficulty with cleaning; they suggested we consider an Induction Stove. The more research I did, the more I leaned in this direction.
Choices Choices…..
When choosing between gas, electric, and induction cooktops; induction is generally considered the most energy-efficient option as they are up to 10 percent more energy-efficient than conventional electric smooth top stoves and about three times more efficient than gas stoves. And compared with gas, they’re better for indoor air quality. An induction stove directly heats the cookware instead of the surrounding area, making it significantly more efficient than both gas and standard electric cooktops; however, it may require special cookware and could be more expensive upfront compared to the other options.
Key Points To Consider:
- Efficiency: Induction > Electric > Gas
- Heat Control: Gas heats high and hot. Electric tends to be slower. Induction offers very precise and fast temperature control.
- Cookware Compatibility: While you should be able to use any kind of cookware on both electric and gas stoves, Induction requires special induction-compatible cookware. (Basically, if a magnet sticks well, it’ll work on your Induction stove.
- Cost: Up front, gas tends to be most affordable, followed by electric, and finally induction.
Taking everything into consideration, we settled on investing in an induction stove. MAIN REASON: They are SOOOOO easy to clean! But on top of that, I can touch the stainless steel handles of my pots and pans and no longer burn myself (like I did with our gas range). And if something gets spilled, I can easily wipe it clean immediately (or once I’m done cooking) because the top of the stove doesn’t get hot the same way my gas stove did. It’s AMAZING!
My Favorite Cookware For Induction Ranges = Viking!

After our oven was delivered, I tested all our current cookware to see if anything was compatible. About half was. (Which meant I lost a decent amount of cookware.)
